How to introduce a dog to a new cat?

My Labrador has a very high prey drive but we quickly taught her the neighbors cat is not to chase. We are getting an adult cat from the shelter, a good mouser and very independent. My mom is getting the cat to kill mice. Our garage is INFESTED...and it is a heated garage so the cat will be fine, I went out last night and saw about 5 at the same time(Scout had one in her mouth for a second but it slipped out)

How can we slowly introduce our dog to the new cat?

1. my dog would eat the poison.
2. we got pet safe mouse traps but my dog still tips them over. and it wont make any difference if we even catch like 5 mice a night, it is INFESTEd.

Rub the dog's scent on you and have the cat smell it, then rub the cat's scent on you and have the dog smell it. If the cat reacts badly to the scent or if the dog reacts badly to the scent, don't introduce them yet. Continue the scent thing until they react okay to the scents. Then have the cat be at one side of a closed door, one that you can't see through, and the dog at the other. They will smell each other, test reactions. Continue it until they react okay. Then do the same thing except this time with a door that you can see through. Continue until they react okay. Then place them in the same room, but not right next to each other. They will approach each other. Let them do their own thing, and don't get involved unless you feel it's necessary.

I think the same way as you did the neighbours cat. From the sounds of it the cat sounds like it can look after itself. Just go slowly and let the dog sniff and increase the time spent together little by little. Always keep the dog on a lead to begin with though and dont make a big fuss about it.
